About Chef Steven Biscari Amaral
Chef Steven Amaral, Massachusetts born and graduate of Johnson and Wales traveled abroad through the US and Europe; Spain, France, and Italy. Landing in Hawaii for 20 years working for Sweeney Development Corp as the Corporate Executive Chef and Food and Beverage Director Chef Amaral oversaw 10 hotel openings and multi-unit restaurant concepts in Hawaii, California and Florida as a certified executive chef by the American Culinary Federation. Here he was the First Place gold medal winner of the Hawaii Seafood Challenge, and nominated by the James Beard Foundation for “Chef of the Year” Pacific NW.
After Hawaii Chef Amaral lived in Madrid, Spain for several years working for the 2nd largest restaurant company in Europe, Grupo Vips, before he settled in on Long Island’s East End where he started his own production and catering companies in New York; Blue Owl Productions and Black Tie Caterers. He has been awarded by Dan’s Papers as Dan’s Best of the Best “North Fork Caterer” and “Event Planner”. In later years he started his own Restaurant in Wading River, Amarelle achieving an “Excellent 3 star review” from The New York Times.
Today Chef Amaral continues his food and beverage consulting and is the Executive Chef and Master Chocolatier of North Fork Chocolate Company; a venture he started with his partner Ann Corley in January 2013 through the Stony Brook Incubator at Calverton. Here he crafts gourmet desserts and artisanal chocolates, and in April 2014 he received his latest achievement, the Award of Excellence by the Long Island Food Critic as “Finest Chocolatier”.
